Hi guys!
I have quite a large Zucchini here and was wondering if anyone here may have an easy recipe to cook it. I went into the internet and found a few, but thought maybe one of you'ins..(lol) might have something that's easy and quick.

Here's our favorite... You will have to choose the amounts of each ingredient, I never make it the same twice... Hope your zuchinne is still tender... You might want to remove some of the seeds it it is quite large..

Summer squash & jalepenos.

Bacon, chopped
Onion, chopped
Jalepenos, chopped (or combination of sweet pepper & Jalepeno/other hot pepper)
Summer squash/zuchinni, sliced or chunked (bite sized)
Tomato, chopped (coarsely)
American cheese, sliced or shredded (we like a lot...)
salt and pepper to taste

Instructions:

Saute bacon (suggest non-stick skillet), add onion. Saute till translucent. add peppers/Jalepenos (Crushed red pepper to taste ok if no jalepenos), saute.

Add squash and saute till "crisp" done. Add chopped tomato and
saute till just hot.

Add cheese and heat till sauce forms.

Best when on the HOT side, IMO.

All ingredients are to taste or what's on hand.

Great reheated... If there is any left!

Here's more I like, which are too easy for words...

Slice or chunk and simply cook in a can of stewed tomatoes... Serve on plate with slotted spoon, or in a small bowl with some juice.. (A slice of American cheese is an excellent topper, as well...)

Toss a few handfuls in your favorite Spaghetti sauce and serve on pasta..

Cook to the still firm stage (Al Dente, LOL), and toss in lots of butter/marg., top servings with a healthy dose of coarsely ground black pepper...

Thanks so much PK, that sounds so great!

I'll remove the seeds. Like I said, it's so big. I hope it will taste alright, being so large and all. I'll have to go to town and get the bacon. I have everything else I think.

I found one on the internet that is similar to yours. It called for the onions, green peppers, tomatoes, garlic powder, basil and oregano and the shredded cheese. And of course, salt and pepper to taste.

Gosh, I wished it was suppertime right now!. Me is hungry...lol

That last one sounds good to.

Thought of making bread, but doubt I will. I haven't made any kind of bread in years.

I have made about 6 loaves of zucchini bread in the last week. I love it!! So do my kids, so I (sort of) count it as a vegetable for them.

I have also made a zucchini cake, and it was wonderful as well. You don't taste the zucchini, and it is so moist and tasty...

MMM....now I'm hungry!! Thanks, cindyloo!!!

I've tasted the Zucchini bread and just love it. I might get out of my lazy mood and bake some bread. But, I'm thinking, I'm just too darn lazy today..lol

If your fingernail will easily go through the skin on the zuchinni, it will be fine... If not, you can always peel the durned thing...

I substituted summer squash for cukes in sweet pickle relish... It worked very well, actually.... And canned well, too...

I have not had any success with squash the last two years. I don't know why, it's either feast or famine for me! If I plant a lot, it comes out my ears, but if I just plant a couple of hills, it dies!

Grr... So I am having to BUY squash again this year...

We will be expecting a follow-up report, you know...

Forgot, I usually toss some garlic in the first squash stuff, too...

PK, I did the fingernail test and it seems tender to me.

I've been searching the net to see if this is a Zucchini. See, someone gave it to my husband. I've never grown Zucchini OR squash.

On the net, found pics and it looks like it's a Zucchini. I also thought maybe it was a squash, but it isn't.

I typed in "Squash" and there must be a sports game called Squash. Hmmm..wonder how ya play THAT game?...lol

Oh yes, gotta have the garlic. I love garlic!

I'll let ya know how it turned out. I'm going to do your first recipe.

CindyLoo... Zuchinni are squash... If it's dark green, and available now, it is certainly zuchinni...

They can be substituted in any of the "summer squash" recipes... Straight neck, crookneck, pattypan, etc... My favorite variety is Tromboncino... It has a bulbous end, and a loooong handle. They will get quite large without getting tough, too. And the only part with seeds is in the round end.. It is also a climber, so can be grown on sunny arbors beautifully. The squash then hang straight down, and the greenery is quite lush.

As I recall, they don't succumb to the normal squash problems, either.. Seeds for them are not easily found. Think I will order a packet for next year, for sure...

Oh okay...well this is a Zucchini then, cause it's long and dark green and is kind of round on one end.

I'd like to plant some to. They sound pretty!

Hi cindyloo ~

I don't use applesauce in mine....in fact, I use the recipe from Betty Crocker's cookbook. I've not found another I like as well and is as moist. It's really easy to make, except for chopping the zucchini, but even that's easy if you have a food processor!!!

Thanks Skeeter...This Zucchini is so large, I probably could go ahead and make some bread to.

I don't have a food processor. Wished I did. I have one of those shredder thingys. I could use that.

Oh, but I'm so lazy today...lol

It'll be the casserole for tonite.

LOL MsPiggie, that was cute!

Yayyy PK. Mine is done now, and about ready to eat. It smells so good. We're having Lasagna also. OMG! Can't wait to eat!..lol

I didn't go into town for bacon, so did without it, but it still looks good.

Excellent choice! Hope you enjoyed it...

We had grilled smoked sausage and toasted homeade bread.. BigDog enjoyed his share, too...

My batch got bigger than anticipated, cause I used a little too much jalepeno, and had to add more squash! I had just enough ripe tomatoes to balance it out... Lots left, yum!

I don't have a recipe in front of me at the moment, but I've grown a lot of zucchini and those huge ones are really good stuffed or you can make a really good zucchini bread out of them.

giggles....well, I am even worst than the poster MsPiggie.....but I try to limit my cooking to simple things like boiling water for instant noodles and rice...but even then.... but I do have a suggestion for zucchini.... I once bought a food dehydrator...and with vegetables I would dehydrate them then reconstitute them with
chicken broth and eat them with parmesan cheese melted on them and lots of black pepper with garlic toast......great snack for good movies......fire dept. sends me thank you notes for not cooking......

Mmmmmm PK, your supper sounded delish!!

I was kind of concerned about the jalepenos, due to not having a gallbladder anymore....lol, but didn't bother me at all. Hallelujah!!!

Skeeter, I'm going to try the bread today. I still have enough Zucchini left over. Gosh, that sucker was a big ole' joker..lol

I've never been guilty of burning anything. I'm the type that has a tendency NOT getting food done. I get too impatient. I'm learning though to be more patient. Undercooked food, can sure give ya a tummy ache...lol

I found a good recipe on the net. Gosh, there's so many things that can be made from Zucchinis.

I'll let ya know how THAT turned out...lol

Cindyloo....I grill my zuchini then saute onion, garlic, fresh sliced cherry or whole tomatoes in some olive oil. At the end I add some basil & parmesan cheese ...and finally some ground pepper. Just serve that over your fav' pasta!! You can add other veg's, grilled peppers etc if you want. Delicious!!

Hi Tee...thanks for that suggestion. That sounds delicious! I have enough zucchini left, I may do that for my lunch today, late lunch. I have enough left for the cake, pasta and heaven knows, what else!...lol

Wonder if there's a recipe for Zucchini milkshakes?...lol

Cindyloo, you will be so zucchinied out by the end of summer; they grow and grow and grow....but there really is so much you can do with them.

Thank you Kali. I'm feeling pretty good now, but that first 10 days or so, OMG! Thought'a I'a was'a gonn'a die...(Gilda Radner)..lol

I made the cake yesterday, and Lawdy, was it good! I was so proud..lol

I'm about Zucchini'd out already.
